Baked Chicken with Mushrooms and Artichokes

Brown chicken in skillet Add other ingredients. Cook for 30 minutes.

Ingredients :

4 x chicken breast halves Salt and pepper 1 x 6 ounce jar marinated artichoke hearts 8 oz mushrooms sliced 5 x green onions chopped 1 cup dry white wine

Method :

Preheat oven to 350F. Season chicken breast halves with salt and pepper. Place skin side up in 9×13-inch baking dish. Drain artichokes, reserving marinade. Cut artichoke in half. Top chicken breasts with artichokes, mushrooms and green onions. Pour reserved marinade and white wine over. Bake until chicken is cooked through. about 45 minutes. Serves 4

Artichoke Chicken Mushroom Recipe

Chicken, Artichoke and Mushroom Casserole

Ingredients :

3 lb skinless chicken breast halves 1 1/2 tsp salt 1/4 tsp pepper 1/2 tsp paprika 1 x 14 oz can artichoke hearts water packed 1/2 lb mushrooms sliced 2 tbl flour 2/3 cup nonfat chicken broth 3 tbl sherry 1/2 tsp thyme dried

Method :

Preheat the oven to 375 degrees F. Remove the skin from the chicken. Sprinkle the chicken with salt, pepper and paprika. Brown chicken in a non-stick skillets. After browning, put the chicken in your casserole dish. Arrange the artichoke hearts in the casserole between the pieces of chicken. Add the mushrooms to the same skillet and saute until barely tender. Sprinkle the flour ( preferably quick-mixing type) over the mushrooms and stir it in. Add the chicken broth, sherry and thyme. Cook, stirring until slightly thickened, then pour over the chicken and artichokes. Cover with a lid or with foil. Bake for40 minutes or until chicken juices run clear. You can serve this with rolls and mashed potatoes. Serves 6.

Chicken with Artichoke Hearts and Mushroom

Ingredients :

6 x Chicken breast halves, boned and skinned Salt Pepper Paprika 1 stk butter 1/2 x -(up to) 1 lb Large fresh mushrooms 2 tbl Flour 1 can (13.5-oz) chicken broth 1/2 x -(up to) 1 cup Sherry 1 can (14-oz) artichoke hearts, drained

Method : Sprinkle chicken breasts with salt, pepper and paprika. Saute in 1/2 stick butter. Put chicken aside. ln same skillet (do not use iron skillet) add other half of butter and saute mushrooms. Add 2 Tablespoons flour to the mushrooms, salt and pepper, chicken broth and sherry (to taste). Simmer for 5 to 10 minutes. Place chicken breasts in a 2 quart casserole dish, pour sauce over, cover and cook for 1 hour at 375 to 400 . After an hour, remove from oven and add artichoke hearts. Cover and cook an additional 30 minutes. Yield: 4 to 6 servings.
